We chose to make some of these easy and delicious fritters from red pepper, courgette and carrots, however you can have more fun and explore other flavors also. Cauliflower, sweetcorn and even fennel taste gorgeous as fritters. Add a little lemon and parsley to mayonnaise and make a fresh and simple dip for them too.
*makes approximately 12 fritters
225g grated carrot
225g grated courgette
100g finely chopped red pepper
finely chopped garlic
.finely chopped parsley
3 eggs
100g plain flour
1 teaspoon baking powder
1/2 teaspoon lemon
vegetable oil
salt and pepper to season ( if you like add some sweet smoked paprika and turmeric for some extra flavor)
Put the courgette, carrot, garlic, red pepper and parsley in a large bowl. Stir to combine
In another bowl, whisk together the eggs, flour, and seasoning. Add the egg mixture to the vegetable mixture and stir well, then add the lemon and baking powder.
Heat the oil in a large pan over medium heat. Form the mixture into patties using about 3 tablespoons of batter for each pattie. Cook for about 3 minutes on each side. Repeat until all the fritters are made.
