Courgette Hummus

Cooking time : 25 minutes


Serves 4


Ingredients:

  • 500g courgettes

  • 45g olive oil

  • 3 to 4 cloves garlic

  • Seasoning to taste: parsley, mint or corridander, lemon juice, salt, pepper


Method

. Preheat the oven to 180°C.

. Slice courgettes into 1 cm thick rounds, and pop on a baking tray.

. Peel the garlic cloves, crush them and spread over the courgettes.

. Drizzle courgettes and garlic with the olive oil and season with salt and pepper.

.Pop them in the oven to bake for approx 25 minutes, they are ready when they are tender and starting to brown.

. Next pop them in a blender still hot from the oven.

. Squeeze in the juice of half a lemon and your chosen herb.

. Blend it until smooth.

. Taste test and add more olive oil, seasoning and herbs of required.


And now its ready to spread on your toast or dip your veggies into, also tastes yummy with fish and chips like a mushy pea vibe.
